Ingredients

- 2 cups long-grain white rice
- 4 chicken thighs (bone-in, skin-on)
- 4 cups low-sodium chicken broth
- 1 onion (chopped)
- 2 cloves of garlic (minced)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 cup frozen peas
- 2 tablespoons olive oil
- Fresh parsley (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent, about 3-5 minutes.
- Season chicken thighs with salt, pepper, and paprika. Brown them skin-side down in the pot until nicely crusted on both sides.
- Stir in rice and pour in chicken broth. Mix until combined and bring to a gentle boil.
- Reduce heat to low, cover, and simmer for about 20-25 minutes.
- Stir in frozen peas and cook for an additional 5 minutes.
- Garnish with freshly chopped parsley before serving.
Notes
Make sure not to crowd the pot for optimal browning of the chicken. You can customize the spices to your taste.
