A comforting one-pot meal with tender chicken and fluffy rice infused with savory broth and spices.


Ingredients

  • 2 cups long-grain white rice
  • 4 chicken thighs (bone-in, skin-on)
  • 4 cups low-sodium chicken broth
  • 1 onion (chopped)
  • 2 cloves of garlic (minced)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent, about 3-5 minutes.
  2. Season chicken thighs with salt, pepper, and paprika. Brown them skin-side down in the pot until nicely crusted on both sides.
  3. Stir in rice and pour in chicken broth. Mix until combined and bring to a gentle boil.
  4. Reduce heat to low, cover, and simmer for about 20-25 minutes.
  5. Stir in frozen peas and cook for an additional 5 minutes.
  6. Garnish with freshly chopped parsley before serving.

Notes

Make sure not to crowd the pot for optimal browning of the chicken. You can customize the spices to your taste.
