Ingredients

  • 1/2 Cup Sun-Dried Tomatoes, chopped
  • 1 Teaspoon Italian Seasoning
  • Salt and Pepper to taste
  • Fresh Parsley, for garnish

Instructions

  1. Sear the chicken by heating olive oil in a large skillet over medium-high heat and cooking chicken breasts for about 6-7 minutes on each side until golden and cooked through.
  2. Set the chicken aside on a plate to rest.
  3. Sauté the minced garlic in the same skillet for about one minute until fragrant.
  4. Create the sauce by pouring in heavy cream, Parmesan cheese, and sun-dried tomatoes, then stirring in Italian seasoning and simmering for about 5 minutes.
  5. Coat the chicken in the sauce, allowing it to meld with the flavors for a couple of minutes.
  6. Garnish with fresh parsley and serve warm.

Notes

For lighter flavor, consider substituting heavy cream with half-and-half or coconut milk. Customize by using roasted red peppers instead of sun-dried tomatoes.
