- 1 cup milk
- 2 cups cream
- 1 cup sugar
- 1/2 cup cornstarch
- 4 egg yolks
- 1 tsp vanilla extract
- 1/4 cup passionfruit pulp
- 1/2 cup icing sugar
- 1 sheet of puff pastry
Instructions
- Preheat your oven to 200°C (390°F).
- Roll out the puff pastry on a floured surface and line your baking dish.
- Bake for about 15-20 minutes or until golden and cool.
- Combine milk, cream, and sugar in a saucepan, heating until the sugar dissolves.
- Mix cornstarch and egg yolks in a bowl, then temper with warm milk mixture.
- Slowly add the rest of the milk mixture to the cornstarch mixture, whisking constantly.
- Cook over low heat until thickened, about 5-10 minutes.
- Stir in the vanilla extract.
- Pour custard over the baked pastry and let it cool, then refrigerate for at least 2 hours.
- Mix passionfruit pulp with icing sugar and spread over cooled custard.
- Chill again before serving.
