- 1 lb chicken breast, sliced
- 2 cups mixed rainbow vegetables (bell peppers, broccoli, carrots)
- 2 cups cooked wild rice
- 1/4 cup teriyaki sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add sliced chicken breast and cook until browned.
- Stir in the mixed vegetables and cook until tender.
- Pour in the teriyaki sauce and stir to coat everything evenly.
- Serve over cooked wild rice.

- For a vegetarian option, substitute chicken with tofu.
