My Fave Birria Tacos are a delightful fusion of tender, slow-cooked beef and crispy corn tortillas, bursting with rich, savory flavors. Each bite offers a satisfying crunch followed by a juicy, spiced filling that dances on the palate, enhanced by a hint of fresh cilantro and a squeeze of lime.

  • For the Birria:
    • 3 lbs beef chuck roast, cut into chunks
    • 1 onion, quartered
    • 4 cloves garlic, minced
    • 2 dried guajillo chiles, seeds removed
    • 2 dried ancho chiles, seeds removed
    • 1 tsp cumin
    • 1 tsp oregano
    • 4 cups beef broth
    • Salt and pepper to taste
  • For the Tacos:
    • 12 corn tortillas
    • 1 cup shredded cheese (Oaxaca or mozzarella)
    • 1 cup chopped cilantro
    • 1 lime, cut into wedges

Instructions

  1. In a large pot, combine the beef, onion, garlic, guajillo chiles, ancho chiles, cumin, oregano, and beef broth. Season with salt and pepper.
  2. Bring the mixture to a boil, then reduce heat to low and simmer for 3 hours, or until the beef is tender and easily shredded.
  3. Remove the beef from the pot and shred it with two forks. Strain the broth and reserve it for dipping.
  4. Heat a skillet over medium heat. Dip each tortilla in the reserved broth, then place it in the skillet.
  5. Add a portion of shredded beef and a sprinkle of cheese to one half of the tortilla. Fold the tortilla over and cook until crispy and golden, about 2-3 minutes per side.
  6. Repeat with remaining tortillas and filling.
  7. Serve hot with chopped cilantro and lime wedges on the side.

  • Make-ahead: The birria can be prepared a day in advance and stored in the refrigerator. Reheat before assembling tacos.
