Description
My Fave Birria Tacos are a delightful fusion of tender, slow-cooked beef and crispy corn tortillas, bursting with rich, savory flavors. Each bite offers a satisfying crunch followed by a juicy, spiced filling that dances on the palate, enhanced by a hint of fresh cilantro and a squeeze of lime.
Ingredients
Scale
- For the Birria:
- 3 lbs beef chuck roast, cut into chunks
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 dried guajillo chiles, seeds removed
- 2 dried ancho chiles, seeds removed
- 1 tsp cumin
- 1 tsp oregano
- 4 cups beef broth
- Salt and pepper to taste
- For the Tacos:
- 12 corn tortillas
- 1 cup shredded cheese (Oaxaca or mozzarella)
- 1 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- In a large pot, combine the beef, onion, garlic, guajillo chiles, ancho chiles, cumin, oregano, and beef broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce heat to low and simmer for 3 hours, or until the beef is tender and easily shredded.
- Remove the beef from the pot and shred it with two forks. Strain the broth and reserve it for dipping.
- Heat a skillet over medium heat. Dip each tortilla in the reserved broth, then place it in the skillet.
- Add a portion of shredded beef and a sprinkle of cheese to one half of the tortilla. Fold the tortilla over and cook until crispy and golden, about 2-3 minutes per side.
- Repeat with remaining tortillas and filling.
- Serve hot with chopped cilantro and lime wedges on the side.
