Ingredients

  • 1 cup mushrooms, sliced
  • 1/2 cup onion, diced
  • 1/4 cup milk
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced onions and sauté until translucent.
  4. Add sliced mushrooms and cook until softened.
  5. In a bowl, whisk together eggs, milk, thyme, salt, and pepper.
  6. Pour the egg mixture over the sautéed vegetables in the skillet.
  7. Cook on the stovetop for 2-3 minutes until the edges start to set.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is puffed and golden.
