- 6 large eggs
- 1 cup mushrooms, sliced
- 1/2 cup onion, diced
- 1/4 cup milk
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add diced onions and sauté until translucent.
- Add sliced mushrooms and cook until softened.
- In a bowl, whisk together eggs, milk, thyme, salt, and pepper.
- Pour the egg mixture over the sautéed vegetables in the skillet.
- Cook on the stovetop for 2-3 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is puffed and golden.
- Remove from the oven, let cool slightly, and slice to serve.
Notes
- Feel free to add other vegetables or cheese for extra flavor.
- Can be served warm or at room temperature.
