Ingredients

  • Arborio Rice: 1 cup, rinsed

  • Shallots: 1 medium, finely chopped
  • Garlic: 1 head, roasted
  • Sage: 1/4 cup, fresh, chopped
  • Parmesan Cheese: 1/2 cup, grated
  • Olive Oil: 2 tablespoons
  • Butter: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. In a large saucepan, heat the olive oil and 1 tablespoon of butter over medium heat until shimmering.
  2. Add the chopped shallots and sauté for 2-3 minutes until translucent.
  3. Stir in the sliced mushrooms and cook for 5-7 minutes until they are browned and tender.
  4. Add the Arborio rice and toast for 1-2 minutes, stirring frequently.
  5. Pour in the white wine and let it simmer until mostly absorbed, about 2-3 minutes.
  6. Begin adding the heated vegetable broth, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next, about 18-20 minutes total.
  7. Once the rice is creamy and al dente, stir in the roasted garlic, chopped sage, remaining butter, and Parmesan cheese. Season with salt and pepper to taste.
  8. Remove from heat and let it sit for 2 minutes before serving.
