Mixed Berry Cream Pastries

Description

Delightful pastries filled with a velvety vanilla cream and topped with fresh mixed berries.


Ingredients

  • 1 sheet puff pastry, thawed (about 8 oz / 225g)
  • 1 egg (for egg wash)
  • 1 tbsp water
  • 1 cup whole milk (240 ml)
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry slightly on a floured surface and cut it into 8 equal squares.
  3. Score a smaller square inside each one, being careful not to cut all the way through.
  4. Prick the center of each square with a fork to help steam escape.
  5. Whisk the egg with water and brush the edges of each square lightly.
  6. Bake for 15–18 minutes, until puffed and golden brown.
  7. Cool on a wire rack before preparing the filling.
  8. Whisk milk, sugar, cornstarch, and egg yolks in a saucepan over medium heat until thick and smooth.
  9. Remove from heat, stir in vanilla extract and butter, and let cool completely.
  10. Spoon the vanilla cream into the center of each pastry and top with mixed berries.
  11. Dust lightly with powdered sugar before serving.

Notes

For best results, assemble the pastries on the day you plan to serve them to maintain the crispiness.
