Description
Delightful pastries filled with a velvety vanilla cream and topped with fresh mixed berries.
Ingredients

- 1 sheet puff pastry, thawed (about 8 oz / 225g)
- 1 egg (for egg wash)
- 1 tbsp water
- 1 cup whole milk (240 ml)
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
- 2 egg yolks
- 1 tsp vanilla extract
- 1 tbsp unsalted butter
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry slightly on a floured surface and cut it into 8 equal squares.
- Score a smaller square inside each one, being careful not to cut all the way through.
- Prick the center of each square with a fork to help steam escape.
- Whisk the egg with water and brush the edges of each square lightly.
- Bake for 15–18 minutes, until puffed and golden brown.
- Cool on a wire rack before preparing the filling.
- Whisk milk, sugar, cornstarch, and egg yolks in a saucepan over medium heat until thick and smooth.
- Remove from heat, stir in vanilla extract and butter, and let cool completely.
- Spoon the vanilla cream into the center of each pastry and top with mixed berries.
- Dust lightly with powdered sugar before serving.
Notes
For best results, assemble the pastries on the day you plan to serve them to maintain the crispiness.
