Ingredients

- 1 cup unsalted butter
- 2 cups sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup mint chocolate chips
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- Melt the butter in a large mixing bowl, then stir in the sugar until creamy.
- Add the eggs one at a time, mixing well after each addition, then stir in vanilla.
- Whisk together flour, cocoa powder, and salt in a separate bowl, then gradually stir into the butter mixture.
- Fold in mint and regular chocolate chips.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
- Cool in the pan before cutting into squares.
Notes
These brownies are excellent served warm with vanilla ice cream or chilled with whipped cream.
