- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon peppermint extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish thoroughly.
- Melt the butter in a medium saucepan over low heat, stirring gently to prevent burning. Remove from heat.
- Add the sugar, mixing well, followed by the eggs and vanilla extract. Beat until fully combined.
- Mix in the flour, cocoa powder, and salt until just combined.
- Pour the brownie batter into the prepared baking dish, spreading it evenly with a spatula.
- Bake for 20-25 minutes, or until a toothpick comes out clean. Allow to cool completely.
- Whisk together powdered sugar, milk, and peppermint extract until smooth for the mint layer.
- Spread the mint mixture over the cooled brownies.
- Melt the chocolate chips in the microwave or double boiler and pour over the mint layer.
- Let the chocolate set before slicing into squares.
Notes
For stronger mint flavor, increase the peppermint extract gradually. Brownies taste better a day after baking.
