Description

Decadent mint brownies that combine rich chocolate with a refreshing burst of mint, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish thoroughly.
  2. Melt the butter in a medium saucepan over low heat, stirring gently to prevent burning. Remove from heat.
  3. Add the sugar, mixing well, followed by the eggs and vanilla extract. Beat until fully combined.
  4. Mix in the flour, cocoa powder, and salt until just combined.
  5. Pour the brownie batter into the prepared baking dish, spreading it evenly with a spatula.
  6. Bake for 20-25 minutes, or until a toothpick comes out clean. Allow to cool completely.
  7. Whisk together powdered sugar, milk, and peppermint extract until smooth for the mint layer.
  8. Spread the mint mixture over the cooled brownies.
  9. Melt the chocolate chips in the microwave or double boiler and pour over the mint layer.
  10. Let the chocolate set before slicing into squares.

Notes

For stronger mint flavor, increase the peppermint extract gradually. Brownies taste better a day after baking.
