Description
Delicious mini veggie quesadillas filled with a variety of vegetables, perfect for a quick snack or appetizer.
Ingredients

			- 1 cup shredded cheese (cheddar or mozzarella)
 - 1 cup chopped bell peppers
 - 1 cup chopped spinach
 - 1/2 cup chopped onions
 - 1/2 cup mushrooms, sliced
 - 4 small flour tortillas
 - 1 tablespoon olive oil
 - Salt and pepper to taste
 
Instructions
- Heat olive oil in a skillet over medium heat.
 - Add onions and bell peppers, sauté until softened.
 - Add mushrooms and spinach, cook until spinach wilts.
 - Season with salt and pepper.
 - Place a tortilla in the skillet, sprinkle half with cheese and the veggie mixture.
 - Fold the tortilla in half and cook until golden brown on both sides.
 - Repeat with remaining tortillas and filling.
 - Cut into wedges and serve warm.

- Feel free to customize the veggies based on your preference.
 - Serve with salsa or guacamole for dipping.
 - These can be made ahead and reheated in the oven.
