  • Diet: Vegetarian

Description

Mexican Street Corn, or Elote, is a vibrant dish that tantalizes the taste buds with its creamy, tangy sauce and the sweetness of fresh corn. Each bite offers a delightful crunch from the charred kernels, balanced by the richness of mayonnaise and the zesty kick of lime and chili powder.

Ingredients

Scale
  • Corn: 4 ears of fresh corn, husked
  • For the Sauce:
    • 1/2 cup mayonnaise
    • 1/2 cup sour cream
    • 1 cup crumbled Cotija cheese
    • 2 tablespoons lime juice
    • 1 teaspoon chili powder
    • 1/2 teaspoon garlic powder
  • For Garnish:
    • Chopped cilantro (for sprinkling)
    • Extra lime wedges (for serving)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F).
  2. Place the husked corn directly on the grill and cook for 10-15 minutes, turning occasionally, until the kernels are charred and tender.
  3. While the corn is grilling, in a medium bowl, mix together the mayonnaise, sour cream, Cotija cheese, lime juice, chili powder, and garlic powder until well combined.
  4. Once the corn is cooked, remove it from the grill and let it cool slightly.
  5. Using a brush or spoon, generously coat each ear of corn with the creamy sauce mixture.
  6. Sprinkle additional Cotija cheese and chopped cilantro over the top for garnish.
  7. Serve immediately with lime wedges on the side.

Notes

  • This dish can be made ahead by preparing the sauce and grilling the corn a few hours in advance. Just reheat the corn on the grill before serving.
  • Store any leftover sauce in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute Greek yogurt for sour cream.
