Description
A creamy and flavorful dip inspired by the popular Mexican street food, elote, featuring sweet corn, spices, and cheese.

			- 2 cups sweet corn (fresh or frozen)
 - 1/2 cup mayonnaise
 - 1/2 cup sour cream
 - 1 cup cotija cheese, crumbled
 - 1/4 cup cilantro, chopped
 - 1 lime, juiced
 - 1 teaspoon chili powder
 - 1/2 teaspoon garlic powder
 - Salt and pepper to taste
 
Instructions
- In a large bowl, combine the sweet corn, mayonnaise, and sour cream.
 - Add the crumbled cotija cheese, chopped cilantro, lime juice, chili powder, garlic powder, salt, and pepper.
 - Mix all the ingredients until well combined.
 - Transfer the dip to a serving dish and garnish with additional cilantro and cotija cheese if desired.
 - Serve with tortilla chips or fresh vegetables.
 
Notes
- This dip can be served warm or cold.
 - For a spicier version, add diced jalapeños.
 - Can be made ahead of time and stored in the refrigerator for up to 2 days.
