Description

This Mexican Birria Recipe offers a rich, savory experience with tender, slow-cooked meat that melts in your mouth. The complex blend of spices creates a warm, aromatic flavor profile, while the vibrant red color from the chilies entices the senses.

Ingredients

  • Meat: 3 lbs beef chuck roast, cut into large chunks
  • Spices: 4 dried guajillo chilies, 2 dried ancho chilies, 1 tsp cumin seeds, 1 tsp black peppercorns, 1 tsp oregano
  • Vegetables: 1 large onion, quartered; 4 cloves garlic, minced; 2 bay leaves
  • Liquids: 4 cups beef broth, 1 cup apple cider vinegar
  • Garnishes: Chopped cilantro, diced onions, lime wedges

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a dry skillet, toast the guajillo and ancho chilies for 2-3 minutes until fragrant, then soak them in hot water for 15 minutes.
  3. In a blender, combine the soaked chilies, cumin, black peppercorns, oregano, garlic, and 1 cup of beef broth. Blend until smooth.
  4. In a large Dutch oven, heat a tablespoon of oil over medium-high heat. Sear the beef chunks on all sides until browned, about 5-7 minutes.
  5. Pour the chili sauce over the meat, add the remaining beef broth, apple cider vinegar, onion, and bay leaves. Stir to combine.
  6. Cover the pot and transfer it to the oven. Cook for 3 hours, or until the meat is fork-tender.
  7. Remove from the oven and let it rest for 15 minutes before shredding the meat with two forks.
  8. Serve hot with garnishes of cilantro, onions, and lime wedges.
