Ingredients
- Meat: 3 lbs beef chuck roast, cut into large chunks
- Spices: 4 dried guajillo chilies, 2 dried ancho chilies, 1 tsp cumin seeds, 1 tsp black peppercorns, 1 tsp oregano
- Vegetables: 1 large onion, quartered; 4 cloves garlic, minced; 2 bay leaves
- Liquids: 4 cups beef broth, 1 cup apple cider vinegar
- Garnishes: Chopped cilantro, diced onions, lime wedges
Instructions
- Preheat your oven to 300°F (150°C).
- In a dry skillet, toast the guajillo and ancho chilies for 2-3 minutes until fragrant, then soak them in hot water for 15 minutes.
- In a blender, combine the soaked chilies, cumin, black peppercorns, oregano, garlic, and 1 cup of beef broth. Blend until smooth.
- In a large Dutch oven, heat a tablespoon of oil over medium-high heat. Sear the beef chunks on all sides until browned, about 5-7 minutes.
- Pour the chili sauce over the meat, add the remaining beef broth, apple cider vinegar, onion, and bay leaves. Stir to combine.
- Cover the pot and transfer it to the oven. Cook for 3 hours, or until the meat is fork-tender.
- Remove from the oven and let it rest for 15 minutes before shredding the meat with two forks.
- Serve hot with garnishes of cilantro, onions, and lime wedges.
