 - 1 cup cherry tomatoes, halved
 - 1 cup spinach, chopped
 - 1/2 cup feta cheese, crumbled
 - 1/4 cup Kalamata olives, sliced
 - 4 large eggs
 - 1 tablespoon olive oil
 - Salt and pepper to taste
 
Instructions
- In a skillet, heat olive oil over medium heat.
 - Add cherry tomatoes and spinach, cooking until spinach is wilted.
 - In a bowl, whisk the eggs and season with salt and pepper.
 - Pour the eggs into the skillet and scramble until fully cooked.
 - Warm the tortillas in a separate pan or microwave.
 - Assemble the tacos by placing the egg mixture on the tortillas, then topping with feta cheese and olives.
