Ingredients

  • 200g Halloumi cheese
  • 2 large tortillas
  • 1 cup mixed salad greens
  • 1 medium tomato, sliced
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup hummus
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. Slice the halloumi cheese into thick slices.
  3. Brush the halloumi slices with olive oil and season with salt and pepper.
  4. Grill the halloumi for about 2-3 minutes on each side until golden brown.
  5. Warm the tortillas on the grill for about 30 seconds on each side.
  6. Spread hummus on each tortilla.
  7. Add the grilled halloumi, salad greens, tomato, cucumber, and red onion on top of the hummus.
  8. Wrap the tortillas tightly and slice in half to serve.
