			- 1 cup orzo pasta
 - 2 cups cooked chicken, shredded
 - 1 cup cherry tomatoes, halved
 - 1 cucumber, diced
 - 1/2 red onion, finely chopped
 - 1/2 cup Kalamata olives, pitted and sliced
 - 1/2 cup feta cheese, crumbled
 - 1/4 cup fresh parsley, chopped
 - 1/4 cup olive oil
 - 2 tablespoons red wine vinegar
 - 1 teaspoon dried oregano
 - Salt and pepper to taste
 
Instructions
- Cook the orzo pasta according to package instructions. Drain and set aside to cool.
 - In a large bowl, combine the cooked chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
 - Add the cooled orzo to the bowl and mix well.
 - In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
 - Pour the dressing over the salad and toss to combine.
 - Chill in the refrigerator for at least 30 minutes before serving.
