- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 cup mushrooms, sliced
- 1 cup Marsala wine
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
- Add minced garlic and sliced mushrooms to the same skillet and sauté for about 5 minutes.
- Pour in Marsala wine and chicken broth, bring to a gentle simmer and deglaze the pan.
- Return chicken to the skillet, cover, and let simmer for about 10 minutes.
- Cook orzo according to package instructions, drain, and set aside.
- Serve the chicken and sauce over a bed of orzo, garnished with fresh parsley.
