Ingredients
- Salmon fillets
- Maple syrup
- Sriracha sauce
- Mango, diced
- Red onion, diced
- Cilantro, chopped
- Lime, juiced
- Cooked rice
- Bell peppers, sliced
- Cucumber, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the salmon into bite-sized pieces and season with salt and pepper.
- Mix maple syrup and Sriracha sauce until well combined.
- Coat the salmon bites in the maple Sriracha glaze.
- Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes.
- Prepare the mango salsa by combining diced mango, red onion, cilantro, lime juice, and a pinch of salt and pepper in a separate bowl.
- Toss gently and let the flavors mingle for at least five minutes.
- Layer cooked rice in bowls, top with salmon bites, and spoon mango salsa over the fish.
- Finish with sliced bell peppers and cucumbers.
