Description

Tender morsels of salmon glazed with sweet and spicy maple Sriracha, served with vibrant mango salsa.


Ingredients

  • Salmon fillets
  • Maple syrup
  • Sriracha sauce
  • Mango, diced
  • Red onion, diced
  • Cilantro, chopped
  • Lime, juiced
  • Cooked rice
  • Bell peppers, sliced
  • Cucumber, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the salmon into bite-sized pieces and season with salt and pepper.
  3. Mix maple syrup and Sriracha sauce until well combined.
  4. Coat the salmon bites in the maple Sriracha glaze.
  5. Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes.
  6. Prepare the mango salsa by combining diced mango, red onion, cilantro, lime juice, and a pinch of salt and pepper in a separate bowl.
  7. Toss gently and let the flavors mingle for at least five minutes.
  8. Layer cooked rice in bowls, top with salmon bites, and spoon mango salsa over the fish.
  9. Finish with sliced bell peppers and cucumbers.

Notes

You can make the mango salsa ahead of time. Fresh ingredients enhance the flavor. Consider using an air fryer for a quicker, crispier finish.
