Ingredients

  • Sweet Potatoes: 4 large, peeled and cubed
  • Maple Syrup: 1/2 cup, pure
  • Butter: 4 tablespoons, unsalted, melted
  • Brown Sugar: 1/4 cup, packed
  • Vanilla Extract: 1 teaspoon
  • Milk: 1/2 cup, whole or almond
  • Eggs: 2 large, beaten
  • Pecans: 1 cup, chopped
  • Cinnamon: 1 teaspoon
  • Salt: 1/2 teaspoon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot of salted water for 15-20 minutes until tender. Drain and let cool slightly.
  3. In a large mixing bowl, mash the sweet potatoes until smooth.
  4. Add maple syrup, melted butter, brown sugar, vanilla extract, milk, eggs, cinnamon, and salt to the mashed sweet potatoes. Mix until well combined.
