  • Author: Sophie
  • Total Time: 1 hour 10 minutes
  • Yield: 4 servings 1x
  • Diet: Gluten-Free

Description

These Maple Dijon Pork Chops with Sweet Potatoes offer a delightful contrast of flavors and textures. The juicy, tender pork is glazed with a sweet and tangy maple-dijon sauce, while the roasted sweet potatoes provide a creamy, caramelized bite that complements the dish perfectly.

Ingredients

Scale
  • Pork Chops: 4 bone-in pork chops, about 1 inch thick
  • Marinade:
    • 1/4 cup maple syrup
    • 2 tablespoons Dijon mustard
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
  • Sweet Potatoes:
    • 2 large sweet potatoes, peeled and cubed
    • 2 tablespoons olive oil
    • 1 teaspoon paprika
    • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together maple syrup, Dijon mustard, olive oil, minced garlic, salt, and pepper to create the marinade.
  2. Place the pork chops in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat the oven to 400°F (200°C).
  4. In a large bowl, toss the cubed sweet potatoes with olive oil, paprika, salt, and pepper until evenly coated.
  5. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and caramelized, stirring halfway through.
  6. While the sweet potatoes are roasting, heat a skillet over medium-high heat. Remove the pork chops from the marinade and sear them for 3-4 minutes on each side until golden brown.
  7. Transfer the seared pork chops to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let the pork chops rest for 5 minutes before serving with the roasted sweet potatoes.

Notes

  • This dish can be made ahead by marinating the pork chops the night before.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lower-carb option, substitute sweet potatoes with cauliflower florets.
