Description

Delicious mini pancake bites with crispy bacon and a hint of maple syrup, perfect for breakfast or brunch.


Ingredients

  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 4 strips bacon, cooked and chopped
  • 1/4 cup pure maple syrup, plus extra for serving

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 12-cup mini muffin tin.
  2. Cook the bacon in a skillet until crisp, then chop into small pieces.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla.
  5. Combine wet and dry ingredients, stirring gently until just mixed.
  6. Fold in half of the chopped bacon.
  7. Spoon the batter into the muffin tin, filling each cup about one heaping tablespoon.
  8. Top with remaining bacon bits.
  9. Bake for 15–18 minutes until golden brown; a toothpick should come out clean.
  10. Cool slightly, then drizzle with warm maple syrup before serving.
