- 3/4 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 4 strips bacon, cooked and chopped
- 1/4 cup pure maple syrup, plus extra for serving
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 12-cup mini muffin tin.
- Cook the bacon in a skillet until crisp, then chop into small pieces.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla.
- Combine wet and dry ingredients, stirring gently until just mixed.
- Fold in half of the chopped bacon.
- Spoon the batter into the muffin tin, filling each cup about one heaping tablespoon.
- Top with remaining bacon bits.
- Bake for 15–18 minutes until golden brown; a toothpick should come out clean.
- Cool slightly, then drizzle with warm maple syrup before serving.
