Delicious mango oatmeal crumble bars with a chewy oat topping and a burst of tropical flavor.
Ingredients

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/4 cup honey or maple syrup
- 2 ripe mangoes, peeled and diced
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease your baking dish.
- Combine the rolled oats, all-purpose flour, brown sugar, melted butter, honey or maple syrup, cinnamon, and salt in a large bowl.
- Press half of the oat mixture into the bottom of the greased baking dish.
- Toss the diced mangoes with lemon juice in a separate bowl.
- Distribute the mango mixture evenly over the crust.
- Sprinkle the remaining oat mixture over the mango layer.
- Bake for 25-30 minutes until golden brown.
- Allow to cool completely before slicing into bars.
Notes
For a dairy-free option, substitute coconut oil for butter and use agave nectar instead of honey.
