Description

Delicious mango oatmeal crumble bars with a chewy oat topping and a burst of tropical flavor.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey or maple syrup
  • 2 ripe mangoes, peeled and diced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking dish.
  2. Combine the rolled oats, all-purpose flour, brown sugar, melted butter, honey or maple syrup, cinnamon, and salt in a large bowl.
  3. Press half of the oat mixture into the bottom of the greased baking dish.
  4. Toss the diced mangoes with lemon juice in a separate bowl.
  5. Distribute the mango mixture evenly over the crust.
  6. Sprinkle the remaining oat mixture over the mango layer.
  7. Bake for 25-30 minutes until golden brown.
  8. Allow to cool completely before slicing into bars.

Notes

For a dairy-free option, substitute coconut oil for butter and use agave nectar instead of honey.
