Description

Delightful Mango Curd Bars with a buttery crust and a swirl of tart raspberry puree.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup mango puree
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1/2 cup raspberry puree

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 8×8 inch baking pan.
  2. Prepare the crust by combining flour, powdered sugar, and softened butter in a mixing bowl until crumbly. Press into the bottom of the pan and bake for 15-20 minutes until golden brown.
  3. Whisk together the mango puree, granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
  4. Pour the mango filling over the baked crust, spreading evenly. Drop spoonfuls of raspberry puree over the top and swirl gently.
  5. Bake for an additional 20-25 minutes until filling is set with a slight jiggle.
  6. Cool completely in the pan on a wire rack before slicing into squares.

Notes

Try adding toasted coconut or nuts for extra texture and flavor.
