Delightful Mango Curd Bars with a buttery crust and a swirl of tart raspberry puree.

- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup mango puree
- 1/2 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1/2 cup raspberry puree
Instructions
- Preheat your oven to 350°F (175°C) and grease your 8×8 inch baking pan.
- Prepare the crust by combining flour, powdered sugar, and softened butter in a mixing bowl until crumbly. Press into the bottom of the pan and bake for 15-20 minutes until golden brown.
- Whisk together the mango puree, granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
- Pour the mango filling over the baked crust, spreading evenly. Drop spoonfuls of raspberry puree over the top and swirl gently.
- Bake for an additional 20-25 minutes until filling is set with a slight jiggle.
- Cool completely in the pan on a wire rack before slicing into squares.
Notes
Try adding toasted coconut or nuts for extra texture and flavor.
