Delicious and healthy Low Carb Baked Big Mac Rice Paper Rolls that capture the flavors of a classic Big Mac in a lighter, gluten-free version.

- 8 rice paper wrappers
- 1 lb ground beef
- 1/4 cup diced onion
- 1/4 cup shredded lettuce
- 1/4 cup pickles, chopped
- 1/4 cup shredded cheddar cheese
- 1/4 cup Thousand Island dressing
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground beef with diced onion until browned. Season with salt and pepper.
- Soak rice paper wrappers in warm water until soft, then lay them flat on a clean surface.
- Place a spoonful of the beef mixture, lettuce, pickles, cheese, and a drizzle of dressing on each wrapper.
- Fold the sides of the wrapper over the filling and roll tightly.
- Place the rolls on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Serve warm with additional dressing for dipping.
Notes
- Make sure not to over-soak the rice paper wrappers to prevent tearing.
- Feel free to customize the filling with your favorite Big Mac ingredients.
- These rolls can be made ahead of time and baked just before serving.
