A quick and delicious Loaded Taco Pasta Bake that combines the flavors of tacos with pasta for a hearty meal.

- 8 oz pasta
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente.
- In a skillet, brown the ground beef over medium heat, then drain excess fat.
- Add taco seasoning, black beans, corn, and salsa to the beef, stirring to combine.
- Mix the cooked pasta with the beef mixture and half of the cheese.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with sour cream and green onions before serving.
Notes
- Feel free to add your favorite taco toppings like jalapeños or avocado.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- For a vegetarian version, substitute ground beef with lentils or a meat alternative.
