Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente.
  3. In a skillet, brown the ground beef over medium heat, then drain excess fat.
  4. Add taco seasoning, black beans, corn, and salsa to the beef, stirring to combine.
  5. Mix the cooked pasta with the beef mixture and half of the cheese.
  6. Transfer the mixture to a baking dish and top with the remaining cheese.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Garnish with sour cream and green onions before serving.
