- 12 mini potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup cooked bacon bits
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the mini potatoes, then pierce them with a fork.
- Place the potatoes on a baking sheet and bake for 25-30 minutes, or until tender.
- Remove from the oven and let cool slightly.
- Cut the tops off the potatoes and scoop out a small portion of the flesh.
- In a bowl, mix the scooped potato flesh with cheddar cheese, sour cream, green onions, bacon bits, salt, and pepper.
- Stuff the mixture back into the potato skins.
- Return the stuffed potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve warm and enjoy!
