			- 4 salmon fillets
 - 2 tablespoons olive oil
 - 2 lemons (zested and juiced)
 - 2 cloves garlic (minced)
 - 1 teaspoon dried oregano
 - 1 teaspoon dried thyme
 - Salt and pepper to taste
 - 4 cups mixed greens
 - 1 cup cherry tomatoes (halved)
 - 1 avocado (sliced)
 - 1/4 cup fresh parsley (chopped)
 
Instructions
- Preheat the oven to 400°F (200°C).
 - In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
 - Place the salmon fillets on a baking sheet and brush the lemon herb mixture over them.
 - Bake the salmon for 12-15 minutes or until cooked through.
 - While the salmon is baking, prepare the bowls by dividing mixed greens, cherry tomatoes, and avocado among serving bowls.
 - Once the salmon is done, place a fillet on top of each bowl.
 - Garnish with fresh parsley and serve immediately.
 
Notes
- For extra flavor, marinate the salmon for 30 minutes before baking.
 - Feel free to add other vegetables to the bowls, such as cucumbers or bell peppers.
