  • 1 cup cherry tomatoes (halved)
  • 1 avocado (sliced)
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  3. Place the salmon fillets on a baking sheet and brush the lemon herb mixture over them.
  4. Bake the salmon for 12-15 minutes or until cooked through.
  5. While the salmon is baking, prepare the bowls by dividing mixed greens, cherry tomatoes, and avocado among serving bowls.
  6. Once the salmon is done, place a fillet on top of each bowl.
