- 1 lb boneless, skinless chicken breasts (3–4 pieces)
- 2 cloves fresh garlic, minced
- 1 cup orzo pasta
- 1 bell pepper (any color), diced
- 1 medium zucchini, sliced
- 1 cup broccoli florets
- 2 tbsp low-sodium soy sauce
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Wash your vegetables and chop them into bite-sized pieces. Cube the chicken evenly.
- Cook the orzo: Bring salted water to a boil, add orzo, and cook for about 8 minutes until al dente. Drain and set aside.
- Sauté the chicken: In a large skillet over medium-high heat, warm olive oil. Season chicken with salt and pepper and cook for 5-7 minutes until golden brown.
- Add vegetables: Stir in minced garlic and sauté for 1 minute until aromatic. Add bell peppers, zucchini, and broccoli; sauté until tender-crisp for about 5 minutes.
- Create the sauce: Whisk together soy sauce and lemon juice, then pour over chicken and veggies, stirring to coat.
- Combine everything: Add cooked orzo to the skillet, tossing gently until everything is heated through and coated. Serve hot.
Notes
Make a head by prepping ingredients and marinating chicken the night before. For a lighter texture, try air frying the chicken.
