Ingredients

  • 4 Salmon Fillets
  • 1 Lemon (juice and zest)
  • 4 tablespoons Unsalted Butter
  • 2 cups Yukon Gold or Red Potatoes (cubed)
  • 2 cups Fresh Broccoli Florets
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • 2 cloves Garlic (minced, optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the Potatoes: Toss cubed potatoes with olive oil, salt, and pepper, then spread on a baking sheet.
  3. Bake for 20 minutes, or until golden and crispy.
  4. Season the salmon fillets with salt and pepper.
  5. Melt the butter in a small saucepan, then stir in lemon juice, zest, and garlic if using.
  6. Add broccoli to the baking sheet with 10 minutes left of potato cooking time.
  7. Place salmon on the baking sheet and brush with lemon butter sauce.
  8. Bake for an additional 5 minutes until salmon flakes easily.
  9. Serve with remaining lemon butter sauce drizzled on top.

Notes

Marinate the salmon in lemon juice a few hours ahead for enhanced flavor. Use an air fryer for quicker cooking if preferred.
