- 4 Salmon Fillets
- 1 Lemon (juice and zest)
- 4 tablespoons Unsalted Butter
- 2 cups Yukon Gold or Red Potatoes (cubed)
- 2 cups Fresh Broccoli Florets
- 2 tablespoons Olive Oil
- Salt, to taste
- Pepper, to taste
- 2 cloves Garlic (minced, optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the Potatoes: Toss cubed potatoes with olive oil, salt, and pepper, then spread on a baking sheet.
- Bake for 20 minutes, or until golden and crispy.
- Season the salmon fillets with salt and pepper.
- Melt the butter in a small saucepan, then stir in lemon juice, zest, and garlic if using.
- Add broccoli to the baking sheet with 10 minutes left of potato cooking time.
- Place salmon on the baking sheet and brush with lemon butter sauce.
- Bake for an additional 5 minutes until salmon flakes easily.
- Serve with remaining lemon butter sauce drizzled on top.
Notes
Marinate the salmon in lemon juice a few hours ahead for enhanced flavor. Use an air fryer for quicker cooking if preferred.
