Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
  2. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Reduce the heat and stir in the remaining butter until melted and the sauce is smooth.
  6. Return the chicken to the skillet and coat with the sauce. Cook for an additional 2 minutes.
  7. Garnish with fresh parsley before serving.
