- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/4 cup unsalted butter
- 1/4 cup olive oil
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.
- Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Reduce the heat and stir in the remaining butter until melted and the sauce is smooth.
- Return the chicken to the skillet and coat with the sauce. Cook for an additional 2 minutes.
- Garnish with fresh parsley before serving.
Notes
- Serve with pasta or rice to soak up the delicious sauce.
- For a thicker sauce, you can add a cornstarch slurry.
- Adjust the amount of lemon juice to taste for more or less tanginess.
