- For the Broth:
- 4 cups beef broth
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- For the Ramen:
- 2 packs of fresh ramen noodles
- 1 cup bok choy, chopped
- 2 green onions, sliced
- 1 soft-boiled egg (optional)
Instructions
- In a bowl, marinate the sliced flank steak with soy sauce, sesame oil, chili paste, and minced garlic for at least 30 minutes.
- In a large pot, combine beef broth, gochujang, soy sauce, rice vinegar, and sugar. Bring to a simmer over medium heat.
- Add the marinated beef to the broth and cook for 5-7 minutes until the beef is tender and cooked through.
- Meanwhile, cook the ramen noodles according to package instructions, usually about 3-4 minutes.
- In the last minute of cooking the noodles, add the bok choy to the pot to wilt.
- Drain the noodles and divide them into bowls. Ladle the hot broth and beef mixture over the noodles.
- Top with sliced green onions and a soft-boiled egg if desired. Serve immediately.
Notes
- This dish can be made ahead by preparing the broth and marinating the beef a day in advance. Store separately in the refrigerator.
- Leftover broth can be stored in an airtight container for up to 3 days.
