Ingredients

  • Potatoes: 4 medium-sized, peeled and grated
  • Cheese: 1 cup shredded mozzarella or cheddar
  • Green onions: 2, finely chopped
  • All-purpose flour: 1/2 cup
  • Egg: 1 large, beaten
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Vegetable oil: for frying

Instructions

  1. In a large bowl, combine the grated potatoes, cheese, green onions, flour, beaten egg, salt, and pepper until well mixed.
  2. Heat a non-stick skillet over medium heat and add enough vegetable oil to coat the bottom.
  3. Once the oil is hot, scoop about 1/4 cup of the potato mixture into the skillet, flattening it slightly with a spatula.
  4. Fry for 4-5 minutes on one side until golden brown, then flip and cook for an additional 4-5 minutes on the other side.
  5. Remove from the skillet and place on paper towels to drain excess oil.
  6. Repeat with the remaining mixture, adding more oil as needed.
  7. Serve hot with dipping sauce of your choice.
