Ingredients
- Potatoes: 4 medium-sized, peeled and grated
- Cheese: 1 cup shredded mozzarella or cheddar
- Green onions: 2, finely chopped
- All-purpose flour: 1/2 cup
- Egg: 1 large, beaten
- Salt: 1 teaspoon
- Pepper: 1/2 teaspoon
- Vegetable oil: for frying
Instructions
- In a large bowl, combine the grated potatoes, cheese, green onions, flour, beaten egg, salt, and pepper until well mixed.
- Heat a non-stick skillet over medium heat and add enough vegetable oil to coat the bottom.
- Once the oil is hot, scoop about 1/4 cup of the potato mixture into the skillet, flattening it slightly with a spatula.
- Fry for 4-5 minutes on one side until golden brown, then flip and cook for an additional 4-5 minutes on the other side.
- Remove from the skillet and place on paper towels to drain excess oil.
- Repeat with the remaining mixture, adding more oil as needed.
- Serve hot with dipping sauce of your choice.
