- 227 g unsalted butter, softened
- 100 g granulated sugar
- 250 g all-purpose flour
- 1.25 g (1/4 teaspoon) kosher salt
- 5 large eggs, at room temperature
- 300 g granulated sugar
- 95 g all-purpose flour
- 180 ml key lime juice
- 2 tablespoons key lime zest
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 175°C (350°F).
- Line a 23×33 cm baking pan with parchment paper and grease it lightly.
- In a mixing bowl, cream the softened butter for 2-3 minutes until light and fluffy.
- Add the granulated sugar and flour, mixing until combined.
- Press the dough into the prepared pan and chill for 15 minutes.
- Bake the crust for 15-20 minutes until lightly golden and cool completely.
- Whisk together the eggs, sugar, flour, key lime juice, and zest in a large bowl until smooth.
- Pour the filling over the cooled crust and bake for 25-30 minutes until just set.
- Cool completely and refrigerate until cold.
- Dust with powdered sugar, slice into bars, and serve.
Notes
These bars can be made ahead and stored in the refrigerator for up to five days or frozen for up to three months.
