Description

A deliciously decadent Keto Sausage Egg Spinach bake with creamy eggs, peppery spinach, and melting cheddar, perfect for breakfast or brunch.


Ingredients

  • 1 lb ground pork sausage (sugar-free)
  • 5 oz fresh spinach (roughly chopped)
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • 10 large eggs
  • 1 tablespoon olive oil
  • Butter or nonstick spray for greasing
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. Grease a 9×13 inch baking dish with butter or nonstick spray.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add diced onion and minced garlic; sauté for 2 to 3 minutes until soft and fragrant.
  5. Add ground pork sausage, breaking it apart with a spatula. Cook for 5 to 7 minutes, stirring occasionally, until browned and cooked through.
  6. Stir in chopped spinach and cook for 1 to 2 minutes until wilted.
  7. Remove from heat and let cool slightly.
  8. In a large bowl, whisk together eggs, heavy cream, sea salt, black pepper, and smoked paprika (if using).
  9. Stir the sausage-spinach mixture into the eggs, then fold in shredded cheddar cheese.
  10. Pour the combined mixture into the prepared baking dish and spread evenly.
  11. Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.
  12. Let cool for 5 minutes before slicing.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days. For longer storage, freeze slices in a freezer-safe container.
