A deliciously decadent Keto Sausage Egg Spinach bake with creamy eggs, peppery spinach, and melting cheddar, perfect for breakfast or brunch.

- 1 lb ground pork sausage (sugar-free)
- 5 oz fresh spinach (roughly chopped)
- 1 small onion (finely diced)
- 2 cloves garlic (minced)
- 1 cup shredded cheddar cheese
- 1/4 cup heavy cream
- 10 large eggs
- 1 tablespoon olive oil
- Butter or nonstick spray for greasing
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
Instructions
- Preheat your oven to 350°F.
- Grease a 9×13 inch baking dish with butter or nonstick spray.
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic; sauté for 2 to 3 minutes until soft and fragrant.
- Add ground pork sausage, breaking it apart with a spatula. Cook for 5 to 7 minutes, stirring occasionally, until browned and cooked through.
- Stir in chopped spinach and cook for 1 to 2 minutes until wilted.
- Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, heavy cream, sea salt, black pepper, and smoked paprika (if using).
- Stir the sausage-spinach mixture into the eggs, then fold in shredded cheddar cheese.
- Pour the combined mixture into the prepared baking dish and spread evenly.
- Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.
- Let cool for 5 minutes before slicing.
Notes
Store leftovers in an airtight container in the refrigerator for up to four days. For longer storage, freeze slices in a freezer-safe container.
