A healthier twist on the classic Reuben sandwich, these Keto Crispy Reuben Roll-Ups are filled with corned beef, Swiss cheese, and sauerkraut, all enveloped in a crispy shell.

- 8 oz corned beef, sliced
- 1 cup sauerkraut, drained
- 1 cup shredded Swiss cheese
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- Optional: Lettuce leaves for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Heat the olive oil in a skillet over medium heat.
- Place a slice of Swiss cheese in the skillet and allow it to melt slightly.
- Add a few slices of corned beef and a spoonful of sauerkraut on top of the melted cheese.
- Roll the cheese around the filling to form a roll-up, tucking in the edges.
- Place the roll-up seam side down on a baking sheet lined with parchment paper.
- Repeat with the remaining ingredients.
- Bake for 10-12 minutes or until the cheese is crispy and golden.
- Serve warm with Dijon mustard on the side.
Notes
You can make these roll-ups ahead of time and refrigerate. Bake before serving for a quick warm treat.
