Description

A healthier twist on the classic Reuben sandwich, these Keto Crispy Reuben Roll-Ups are filled with corned beef, Swiss cheese, and sauerkraut, all enveloped in a crispy shell.


Ingredients

  • 8 oz corned beef, sliced
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • Optional: Lettuce leaves for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a skillet over medium heat.
  3. Place a slice of Swiss cheese in the skillet and allow it to melt slightly.
  4. Add a few slices of corned beef and a spoonful of sauerkraut on top of the melted cheese.
  5. Roll the cheese around the filling to form a roll-up, tucking in the edges.
  6. Place the roll-up seam side down on a baking sheet lined with parchment paper.
  7. Repeat with the remaining ingredients.
  8. Bake for 10-12 minutes or until the cheese is crispy and golden.
  9. Serve warm with Dijon mustard on the side.

Notes

You can make these roll-ups ahead of time and refrigerate. Bake before serving for a quick warm treat.
