- 2 medium zucchinis
- 1 cup cooked chicken, shredded
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the center to create boats.
- In a bowl, mix the shredded chicken, marinara sauce, Italian seasoning, salt, and pepper.
- Fill each zucchini boat with the chicken mixture.
- Top with shredded mozzarella and grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
- For extra flavor, add garlic powder or crushed red pepper to the chicken mixture.
