Ingredients
- Kataifi pastry: 200g, thawed
- Pistachios: 100g, finely chopped
- Unsalted butter: 100g, melted
- Ricotta cheese: 250g
- Powdered sugar: 50g
- Vanilla extract: 1 tsp
- Honey: 2 tbsp
- Water: 1 cup (for syrup)
- Granulated sugar: 1 cup (for syrup)
- Lemon juice: 1 tbsp (for syrup)
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix ricotta cheese, powdered sugar, vanilla extract, and honey until smooth.
- Take a handful of kataifi pastry and separate the strands gently.
- Brush a baking tray with melted butter and place a small amount of the cheese mixture at one end of the kataifi strands.
- Roll the kataifi around the filling tightly, securing the ends with melted butter.
- Repeat until all filling is used, placing the rolls seam-side down on the tray.
- Brush the tops with more melted butter and bake for 25-30 minutes or until golden brown.
- While baking, prepare the syrup by boiling water, granulated sugar, and lemon juice for 10 minutes until slightly thickened.
- Once the rolls are baked, drizzle the syrup over them while they are still warm.
- Let cool slightly before serving, garnished with chopped pistachios.
