Description

Ingredients

  • Kataifi pastry: 200g, thawed
  • Pistachios: 100g, finely chopped
  • Unsalted butter: 100g, melted
  • Ricotta cheese: 250g
  • Powdered sugar: 50g
  • Vanilla extract: 1 tsp
  • Honey: 2 tbsp
  • Water: 1 cup (for syrup)
  • Granulated sugar: 1 cup (for syrup)
  • Lemon juice: 1 tbsp (for syrup)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix ricotta cheese, powdered sugar, vanilla extract, and honey until smooth.
  3. Take a handful of kataifi pastry and separate the strands gently.
  4. Brush a baking tray with melted butter and place a small amount of the cheese mixture at one end of the kataifi strands.
  5. Roll the kataifi around the filling tightly, securing the ends with melted butter.
  6. Repeat until all filling is used, placing the rolls seam-side down on the tray.
  7. Brush the tops with more melted butter and bake for 25-30 minutes or until golden brown.
  8. While baking, prepare the syrup by boiling water, granulated sugar, and lemon juice for 10 minutes until slightly thickened.
  9. Once the rolls are baked, drizzle the syrup over them while they are still warm.
  10. Let cool slightly before serving, garnished with chopped pistachios.
