			- 4 chicken thighs
 - 2 tablespoons jerk seasoning
 - 1 tablespoon olive oil
 - 1 ripe mango, diced
 - 1/2 red onion, finely chopped
 - 1 red bell pepper, diced
 - 1 lime, juiced
 - Salt and pepper to taste
 
Instructions
- Preheat the grill to medium-high heat.
 - In a bowl, mix the jerk seasoning with olive oil and coat the chicken thighs.
 - Grill the chicken for about 6-7 minutes on each side or until fully cooked.
 - In another bowl, combine the diced mango, red onion, red bell pepper, lime juice, salt, and pepper to make the salsa.
 - Serve the grilled chicken topped with mango salsa.
 
Notes
- For extra heat, add chopped jalapeños to the salsa.
 - Let the chicken marinate for at least 1 hour for better flavor.
 - Serve with rice or a side salad for a complete meal.
