Ingredients

  • 2 cups shredded chicken
  • 1 cup sharp cheddar cheese, shredded
  • 1 packet ranch seasoning
  • 23 jalapeños, diced
  • 1 cup breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten
  • Oil for frying

Instructions

  1. In a large mixing bowl, combine the shredded chicken, cheddar cheese, ranch seasoning, and diced jalapeños.
  2. Form the mixture into small balls or poppers, about the size of a golf ball.
  3. Prepare a three-step dredging station with flour, beaten eggs, and breadcrumbs.
  4. Dredge each popper in flour, dip in eggs, and roll in breadcrumbs until coated.
  5. Heat oil in a frying pan over medium heat and fry each popper for 3-4 minutes on each side.
  6. Combine sour cream with additional ranch seasoning for the dip.
  7. Serve the poppers hot with creamy dip on the side.
