- 1 block cream cheese, softened
- 2 fresh jalapeños, diced
- 0.5 lb crispy bacon, chopped
- 0.25 cup shredded cheddar cheese
- 1 tbsp garlic powder
- 1 large salmon filet, skin removed
- BBQ rub, as preferred
- Cedar plank, soaked in water for at least 30 minutes
- BBQ sauce, for glazing
Instructions
- Preheat the grill to 250°F, using apple wood for flavor.
- Combine softened cream cheese, diced jalapeños, chopped bacon, cheddar cheese, and garlic powder in a large bowl.
- Remove skin from the salmon and sprinkle BBQ rub generously.
- Spread the cream cheese mixture over the salmon filet.
- Roll the salmon tightly into a log shape and secure with kitchen twine.
- Slice into pinwheels using a sharp knife.
- Dust each pinwheel with a light layer of BBQ rub.
- Place on a pre-soaked cedar plank and grill indirectly for about 40 minutes.
- Brush with BBQ sauce in the last 15 minutes of cooking.
- Check for doneness with an internal temperature of 140°F.
- Allow to rest for 3 minutes before slicing.
Notes
Prepare filling a day in advance for convenience. If grilling is not an option, you can bake or air-fry the pinwheels as alternative cooking methods.
