Description

A delicious blend of succulent salmon, zesty cream cheese, spicy jalapeños, and crispy bacon rolled into pinwheels, perfect for any gathering.


Ingredients

  • 1 block cream cheese, softened
  • 2 fresh jalapeños, diced
  • 0.5 lb crispy bacon, chopped
  • 0.25 cup shredded cheddar cheese
  • 1 tbsp garlic powder
  • 1 large salmon filet, skin removed
  • BBQ rub, as preferred
  • Cedar plank, soaked in water for at least 30 minutes
  • BBQ sauce, for glazing

Instructions

  1. Preheat the grill to 250°F, using apple wood for flavor.
  2. Combine softened cream cheese, diced jalapeños, chopped bacon, cheddar cheese, and garlic powder in a large bowl.
  3. Remove skin from the salmon and sprinkle BBQ rub generously.
  4. Spread the cream cheese mixture over the salmon filet.
  5. Roll the salmon tightly into a log shape and secure with kitchen twine.
  6. Slice into pinwheels using a sharp knife.
  7. Dust each pinwheel with a light layer of BBQ rub.
  8. Place on a pre-soaked cedar plank and grill indirectly for about 40 minutes.
  9. Brush with BBQ sauce in the last 15 minutes of cooking.
  10. Check for doneness with an internal temperature of 140°F.
  11. Allow to rest for 3 minutes before slicing.

Notes

Prepare filling a day in advance for convenience. If grilling is not an option, you can bake or air-fry the pinwheels as alternative cooking methods.
