- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup pumpkin puree
- 1 teaspoon pumpkin spice
- 1 cup whipped cream for topping
- Chocolate or black icing for decoration
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, one at a time, mixing well after each addition.
- Stir in pumpkin puree and pumpkin spice until fully combined.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours or overnight.
- Once chilled, top with whipped cream and use chocolate icing to create a Jack-O’-Lantern face.
Notes
- Ensure the cream cheese is at room temperature for easier mixing.
- For a richer flavor, use homemade pumpkin puree.
- Decorate the cheesecake just before serving to maintain the whipped cream’s texture.
