- 2 cups kimchi, chopped
- 1 lb pork belly, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 4 cups water or broth
- 2 tablespoons gochugaru (Korean red pepper flakes)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 block tofu, cubed
- 2 green onions, chopped
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add the pork belly and cook until browned.
- Stir in the onion, garlic, and ginger, cooking until fragrant.
- Add the chopped kimchi and gochugaru, stirring to combine.
- Pour in the water or broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add the soy sauce and tofu, cooking for an additional 10 minutes.
- Garnish with green onions before serving.
Notes
- Adjust the spice level by adding more or less gochugaru.
- For a vegetarian version, substitute pork with mushrooms or other vegetables.
- Serve with steamed rice for a complete meal.
