- 1 cup Irish whiskey
- 1 cup heavy cream
- 2 tablespoons olive oil

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook until browned on both sides, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic, sautéing until softened.
- Pour in the Irish whiskey and let it simmer for a few minutes to reduce.
- Add the heavy cream and thyme, stirring to combine.
- Return the chicken to the skillet, cover, and simmer for 10-15 minutes until the chicken is cooked through.
- Season with salt and pepper to taste before serving.
