- 4 boneless, skinless chicken breasts
- 8 ounces brie cheese, cut into slices
- 1 cup fresh cranberries
- 1/4 cup brown sugar
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a small saucepan, combine cranberries and brown sugar over medium heat until the cranberries burst and the mixture thickens, about 5-7 minutes.
- While the cranberry mixture cools, prepare the chicken breasts by making a pocket in each breast.
- Stuff each chicken breast with slices of brie cheese and a spoonful of the cranberry mixture.
- Season the outside of the chicken with olive oil, garlic powder, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before slicing. Garnish with fresh thyme if desired.
Notes
- For a sweeter flavor, add more brown sugar to the cranberry mixture.
- Serve with a side of roasted vegetables or a fresh salad.
- This dish can be prepared ahead of time and baked just before serving.
