Description
Deliciously sweet and buttery cornbread muffins with a hint of heat from hot honey.
Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup hot honey
Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, melted butter, eggs, and hot honey.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool slightly before serving with additional hot honey butter if desired.
Notes
- For extra sweetness, drizzle more hot honey on top before serving.
- These muffins can be stored in an airtight container for up to 3 days.
- Feel free to add jalapeños for an extra kick!
