Description

Deliciously sweet and buttery cornbread muffins with a hint of heat from hot honey.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup hot honey

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, melted butter, eggs, and hot honey.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool slightly before serving with additional hot honey butter if desired.

Notes

  • For extra sweetness, drizzle more hot honey on top before serving.
  • These muffins can be stored in an airtight container for up to 3 days.
  • Feel free to add jalapeños for an extra kick!
