- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- In a bowl, mix honey, lime juice, garlic powder, cumin, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- While the chicken is marinating, prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
- Serve the grilled chicken topped with mango salsa.
Notes
- For extra flavor, let the chicken marinate overnight.
- Adjust the spiciness of the salsa by adding more or less jalapeño.
