  5. While the dough rises, prepare the butter layer by placing the cold butter between two sheets of parchment paper and pounding it into a 1/2-inch thick rectangle.
  6. Once the dough has risen, roll it out into a rectangle, place the butter layer in the center, and fold the dough over the butter.
  7. Roll out the dough into a long rectangle, then fold it into thirds (like a letter). Repeat this process two more times, chilling the dough for 30 minutes between each fold.
  8. After the final fold, roll the dough out to about 1/4 inch thick and cut into triangles.
  9. Roll each triangle from the base to the tip and place on a baking sheet lined with parchment paper.
  10. Cover and let the croissants rise for 1 hour, then preheat the oven to 400°F.
  11. Bake for 15-20 minutes or until golden brown and flaky.
