- 1 cup Greek yogurt
- 1/2 cup red bell pepper, diced

Instructions
- If using fresh corn, boil or grill it until tender, then slice the kernels off the cob. If using canned or frozen corn, simply drain, rinse, or thaw it.
- In a large mixing bowl, combine the corn, Greek yogurt, diced red bell pepper, diced red onion, and chopped cilantro.
- Squeeze the fresh lime juice over the mixture, seasoning it with salt, pepper, and optional chili powder or paprika.
- Mix everything together until all ingredients are well-coated.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
