- 1 cup pumpkin puree
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, mix together the pumpkin puree, honey (or maple syrup), and eggs until well combined.
- In another bowl, combine the almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill each muffin cup about 3/4 full with the batter.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before removing from the tin.
Notes
- Store in an airtight container for up to 5 days.
- These donut holes can be frozen for longer storage.
- Feel free to add chocolate chips or nuts for extra flavor.
