These Healthy Pumpkin Donut Holes are a guilt-free treat that are both Paleo and gluten-free, perfect for satisfying your sweet tooth without the added sugar and carbs.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the pumpkin puree, honey (or maple syrup), and eggs until well combined.
  3. In another bowl, combine the almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fill each muffin cup about 3/4 full with the batter.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Let cool for a few minutes before removing from the tin.
